We have something to impress your sweet tooth. This delicacy is a fan favorite among Indian folks. The recipe without which all our festivities and celebrations are incomplete. The very recipe has been there since the Vedic period and still hasn’t lost its significance. The recipe we are talking about is Kheer. This kheer, however, is going to be a little different. Like all our other recipes we have tried to give it a healthy makeover. This kheer will be completely vegan with a lot of health benefits. So, without further ado, let’s begin this amazing recipe. 

Ingredients 

  • Rice – ½  cup 
  • Almond – 1 cup
  • Maple syrup – ½  cup 
  • Cardamom – ¼ tablespoon(crushed)
  • Saffron – 9 to 10 strands 
  • Raisins – 1 tablespoon 

Preparation time: 20-25minutes 

Instructions 

The recipe calls for a few ingredients, so the preparation is going to be pretty simple. You just need to follow a few simple steps listed below. 

  • Heat a pan on the gas burner.
  • Add ½ cup of rice and 1 cup of water.
  • Cook the rice until it gets soft. 
  • Now we need to add almond milk. To prepare almond milk we need 1 cup of almonds soaked overnight. Peel and grind these almonds along with 1 and ½ cups of water. Once ground, strain the liquid into a glass.
  • Add this almond milk to the pan and mix everything well.  
  • Take ½ cup maple syrup and add to the pan.
  • Now add 8-10 saffron strands soaked in 1 tablespoon of vegan milk. 
  • Finally, add crushed cardamoms and  1 tablespoon of raisins to the pan.
  • Cook for 3 to 4 minutes or till the kheer becomes thick.
  • Your delicious vegan rice kheer is ready.
  • You can refrigerate it for an extra thick consistency.
  • Garnish the kheer with chopped almonds.
